Keto Chicken Hash Recipe with Coconut Dijon Sauce
What makes this Keto chicken hash recipe outstanding is this coconut Dijon sauce! It’s full of healthy fats, and absolutely delicious.
I would never have thought to use coconut butter in the sauce if Fabio, who has been helping in our kitchen, hadn’t tried it (thinking it was the same as coconut cream).

What is coconut butter and is it keto?
If you’re unfamiliar with coconut butter, then please read this section as it often confuses people.
Coconut butter (also sometimes known as coconut manna or creamed coconut) is a combination of coconut oil and shredded coconut pieces.
The photo below shows what coconut butter looks like.
Unlike coconut cream or coconut milk, coconut butter has no water in it – it’s just fat and fiber for the most part. And that makes it highly keto-friendly!

Ingredients
- 4 chicken breasts (800 g), sliced into small slices
- 1 medium onion (110 g), sliced
- 2 carrots (100 g), grated
- 1 leek (90 g), sliced
- 4 Tablespoons of coconut oil (60 ml), to cook with
- Salt and pepper, to taste
- Coconut Dijon sauce (see here for full recipe)
Instructions
- Add the diced chicken breast to the coconut oil and saute until cooked. Season with salt and pepper, to taste.
- Add more coconut oil to the saute pan if necessary and cook the vegetables until tender. Add the chicken pieces back in.
- Serve with the coconut Dijon sauce. (See recipe here.)
