Keto Baking and Keto Flour FAQs

Baking with almond flour can be confusing, so here are some of the common questions people have asked me about low carb baking.

And watch my interview with Carolyn Ketchum from All Day I Dream About Food on Keto baking, flours, and easy desserts here:

Almond flour vs Almond meal – what’s the difference and which is best?

In general, almond flour and almond meal are the same things (almonds blended made into a flour). But here are a few key differences:

  • Almond flour is usually finer than almond meal.
  • Almond meal can be made at home by food processing whole almonds whereas almond flour is store-bought.
  • Almond flour is usually blanched.

For most low carb cakes, you’ll want to use almond flour as the finer blanched flour creates a texture that closer to regular cakes.

The coarser almond meal is better suited to cookies or bars where you want a grainier texture.

Can you use coconut flour instead of almond flour?

Unfortunately not. Coconut flour acts very differently to almond flour in low carb baking. In general, coconut flour is drier (it’s actually defatted) than almond flour. So more coconut oil or ghee is necessary for the low carb recipe as well as extra eggs to help keep it moist and hold the flour together.

That’s why it’s best to follow recipes like the ones above instead of substituting flours into other recipes. So if you’re looking to do baking with almond flour, then pick one of the many recipes above. And if you want to try your hand at baking with coconut flour, then pick one of the coconut flour Keto dessert recipes here.

How many net carbs are there in almond flour?
