Mmm, cookies. Am I right? One of the most challenging things about a meal plan such as the Keto diet is giving up all the sweet treats. Once and a while you just need to make yourself something for the sake of enjoying it. Being on the Keto diet is not supposed to be about taking the fun out of life, but putting more energy into it.

Honestly, if you are just starting out on your ketogenic diet, or are a sucker for sweets, be confident that you are diligent with how often you make treats like these. Too many sweets can lead to sugar cravings.

With that all said, sometimes you just need a cookie. These no-bake Keto butter cookies are easy to assemble while giving you a little treat to make life a little bit sweeter. These butter cookies are ideal as they are low in carbs and sugar-free. This is the recipe you need to make your day.

This Recipe Could Not Be Any Simpler

One thing that may discourage too many baked goods on the keto diet is all of the work and ingredients that are necessary. Sometimes a keto recipe can look absolutely delicious but then you find out that it requires components that you are unsure if you can find, and there are so many steps that you worry about making a mistake.

Well, thankfully, these no-bake butter cookies are as simple to assemble as they come. There are only four ingredients! They take minutes to put together. And, you don’t even have to turn on the oven. The results are a yummy chewy treat that you can feel good about eating.

Some Other Ingredients You Can Add to Spice Things Up

The recipe calls for chunks of pure 100% chocolate, and if you are a chocolate lover like me, then that is just fine. Though, maybe you want to switch things up or try some other ingredients in your pantry. Here are a few ideas of things that would taste wonderful in these butter cookies:

  • Shredded unsweetened coconut
  • Vanilla or citrus extracts
  • Nuts to top your cookie off
  • Cocoa powder
  • Nut butter

Should You Use Ghee or Coconut Oil?

The Keto butter cookie recipe offers you the option of replacing ghee with coconut oil. Deciding which one to use ultimately depends on your preference. Or, maybe, it depends on what you have available, as this is a recipe that is perfect for an impulse treat.

Our preference is to use ghee. This is mostly based on structure. Coconut oil will not solidify the way that ghee will, resulting in a less firm cookie. Though, you may want to try both and see which one you and your family prefer.
