Five Fun Facts About Muffins

  1. The word “muffin” may have been derived from the French term moufflet, which means “soft” or the Old German term Muffe, which means “small cake.”
  2. In England, “muffin” often refers to what American’s call an English muffin. In the nursery rhyme Do You Know the Muffin Man? which was published in the 1820s, the titular muffins are actually English muffins!
  3. The English muffin may have been invented as early as the 10th century but American-style muffins were only invented in the 19th century.
  4. Some states have an official state muffin including Massachusetts, which has adopted the corn muffin, and Minnesota, which has claimed the blueberry muffin.
  5. Since they were invented, there have been savory muffins, such as corn muffins and cheese muffins, alongside the more common sweet varieties.

Muffin Making Tips

  • Always use muffin papers when baking with coconut flour. The combination of coconut flour and eggs make these muffins particularly susceptible to sticking.
  • For easy no-mess muffins, place the batter into a gallon size plastic bag with the corner snipped off or use a cookie dough scoop.
  • For best results, don’t fill muffin tins all the way to the top so that the muffins have a little room to grow without overflowing.
  • Be careful not to overbake as backed good made with coconut flour are prone to dry out if there are baked for too long.
