Ingredients
- 1 cup of broccoli, finely chopped
- 10 eggs, whisked
- 10 slices of ham, diced
- 1/2 onion, finely chopped
- 1/2 cup (120 ml) coconut milk (from the can)
- Salt and pepper to taste
- 1 teaspoon (2 g) baking powder
Instructions
- Preheat oven to 350 F (175 C).
- Mix everything together in a large mixing bowl.
- Pour the batter into greased muffin cups (makes 12 muffins).
- Bake for 25-30 minutes until the middle of the muffins is solid.
