Keto Chicken and Cabbage Stew Recipe
I remember when I was younger, and I went to visit my aunt. The whole adventure was fun spending a week with a younger, more relaxed version of my mother. Except when it came to her cooking. She definitely couldn’t cook like my mother. One dinner specifically turned me off, I must have been eight years old, and the bowl of boiled cabbage and chicken just was not appetizing to my young palate.
Thankfully, I have grown, and my palate has matured. I have much more appreciation for my aunt’s cooking these days. So much so that I thought I should cook this dish as an homage to her. A few replacement ingredients here and there and suddenly we have a Keto chicken and cabbage stew recipe.
A Simple Stew Ready In Time For Dinner
I don’t know about you, but whenever I see the word stew, I automatically think that it is going to take hours and hours to prepare. That is the case for most stews that are made with pork or beef. But, this stew will not require your whole day.
Actually, this stew is so simple it can be made in less than an hour. Once all of your proteins are cooked off, you can just add the remaining ingredients and let it all cook together. It is so simple that you can have this stew ready between picking the kids up from school and dinner time.
A Dish Everyone Can Love
I mentioned that this dish threw me off when I was a child, but that doesn’t mean that kids won’t love it. Besides her choice of dishes, my aunt really was a terrible cook which lead me to not want to eat anything she gave me.
Cabbage is an ingredient that will surprise kids. The taste is not at all what they expect, and the texture will make them love it. Plus, we pumped this recipe up with chicken and bacon, so I’m pretty sure everybody will be happy.
A Few Optional Ingredients
This stew is absolutely fantastic as it is. However, no two people have the same tastes. So, if you want to make some additions, feel free. Here are a few great Keto options for you to try in your stew:
A hearty stew made with bacon, chicken, and lots of delicious cabbage.
- 3 Tablespoons (45 ml) coconut oil, to cook with
- 2 chicken breasts, diced
- 4 slices bacon, diced
- 1/2 onion, diced
- 1/2 cabbage, sliced
- 3 cups (720 ml) water or chicken broth
- Salt and pepper, to taste
- Sauce the chicken, bacon, and onion in the coconut oil until the chicken is browned.
- Add in the cabbage and water and bring to the boil.
- Cook for 1 hour on low heat with the lid on. Add in salt and pepper, to taste.
