These crispy rosemary eggplant fries are my new favorite way to enjoy eggplants. Even better, they are cooked in an air fryer, which means they are ready in minutes.

And they are even better with my creamy tahini aioli dip that will have your tastebuds singing.

Air Fryer Cooking Tips

If you are new to air fryers, you might be a bit confused about how to use them. Don’t worry, I was as well.

However, with a bit of trial and error, I learned a few tips and tricks that made my recipes come out perfectly every time.

Preheat the air fryer. Most recipes require the air fryer to be preheated. I usually turn it on as I prepare the ingredients.

However, if you forget to preheat the air fryer, just turn it on before you add your ingredients. Most air fryers take just a few minutes to preheat.

Grease your air fryer basket or tray before each use. This prevents your food from sticking, which is especially important when you are cooking foods that are coated or  breaded.

However, be sure to never use an aerosol spray to grease your air fryer. A simple oil mister is the perfect, inexpensive tool to use to grease your air fryer.

I suggest using avocado oil to grease your air fryer. Avocado oil has a high smoke point and will not smoke at high temperatures.

Avoid overcrowding the air fryer. This is especially important with recipes like these eggplant fries that require the hot air to circulate around each fry to properly cook them.

Overcrowded air fryers usually lead to soggy, undercooked foods. If you have a smaller air fryer, you might have to cook in batches to make sure the food is perfectly cooked when it comes out of the air fryer.

Turn over the food or shake the basket halfway through the cooking time. This helps to ensure your food cooks evenly. 

And if your food has a bit longer cooking time, you will want to shake the basket several times while the food is cooking.

Just be sure to be careful when you open the air fryer because it’ll be hot. However, when you open the air fryer, the cooking will pause but will resume once you close it.  

Be sure to keep your air fryer clean. Bits of old food or old oil can cause your air fryer to smoke while in use. 

When your air fryer is unplugged and completely cool, simply use a clean cloth or paper towels to wipe the air fryer. Be sure to consult your air fryer manual to find out the best way to clean your air fryer.

Description

Low in carbs but high in flavor, these crunchy air fryer Keto rosemary eggplant fries will soon become a new family favorite.


Ingredients

For the tahini aioli –

  • 2 Tablespoons (30 ml) mayo
  • 1 teaspoon (5 ml) tahini sauce
  • 1/2 lemon, juiced (or to taste)
  • Salt and pepper, to taste

Instructions

  1. Preheat the air fryer to 400 F (200 C).
  2. Combine the dry ingredients in a small bowl. Whisk the egg in a separate small bowl.
  3. Dip each eggplant fry into the whisked egg and then dip it into the almond flour mixture, covering completely. Continue until all of the eggplant fries are breaded.
  4. Place breaded eggplant fries in a single layer, without touching, in the air fryer basket or tray and lightly spray with the avocado oil. (If needed, cook the eggplant fries in several batches.)
  5. Cook the eggplant fries for 15 to 20 minutes until golden brown, turning over halfway through the cook time.
  6. Meanwhile, whisk to combine the tahini aioli ingredients until smooth.
  7. Carefully remove the eggplant fries from the air fryer and let cool slightly before serving with the tahini aioli.
