Simply add all the ingredients to your Instant Pot (you can use a whole chicken or chicken drumsticks). Just make sure to keep the skin on the chicken as this will impart more flavor and fat to the soup.

Place the lid on the Instant Pot and seal the lid. Make sure the vent is closed. Set the Instant Pot to manual and high pressure. Cook for 25 minutes. Then let the pressure out carefully following your Instant Pot instructions.

- 1 whole chicken, with skin on
- 5 ribs celery, chopped
- 2 medium carrots, peeled and chopped
- 1 medium onion, peeled and chopped
- 3 cloves garlic, peeled and chopped
- 2 Tablespoons (6 g) Italian seasoning
- 2 liters (8 cups) water
- 2 Tablespoons (30 g) salt
- 1 teaspoon (1 g) black pepper
- 1/4 cup parsley (4 g), chopped (for garnish when serving)
- Place everything (except for the parsley) into the Instant Pot.
- Set Instant Pot on manual, high pressure for 25 minutes.
- Carefully release the pressure and enjoy.
