What is Collagen?

Both cacao and cocoa powders are made from the cacao bean. The beans are heated at a low temperature which separates the fattiest parts from the rest of the bean. This is called cocoa butter or cacao butter depending on the temperature at which it’s processed.

The product that is left after the fatty parts of the bean are separated is what becomes cacao or cocoa powder. Just like with the butter, the difference between cacao and cocoa is in the temperature that the beans are processed at. Cocoa is heated at much higher temperatures which makes it sweeter but also results in the loss of antioxidants [3, 4]

The terms cacao and cocoa are sometimes used interchangeably but in general, cacao indicates a raw product or one which is processed at a very low temperature as compared cocoa whether you are speaking about butter or powder.
