Make Sure To Cook Your Bacon First
The most satisfying element of this recipe is the contrast of crispy bacon with the smooth, creamy egg. That means we need the best bacon, and it must be cooked to perfection.
So, cook your bacon using one of these methods before placing it into the muffin pan
- Put bacon on a sheet pan and cook at 350 degrees for 5-10 min until edges begin to crisp
- Place on a wire rack on a sheet pan and bake at 400 degrees for 3-5 min until it begins to change color
- Cook in a skillet on medium/medium-high heat until edges are golden, and bacon begins to curl
- Cook on a hot grill pan until bacon begins to firm
Any way you precook the bacon, you need to let it cool enough to handle before placing in the muffin pan. Wrap it around and for ease of lifting, allow it to curl inward at the bottom. This will act as a small ledge to help hold the egg.

- Preheat the oven to 350 F (170 C).
- Cook the bacon so that it’s not crispy and won’t break when you fold it. You can cook the bacon in the skillet or in the oven or even in the microwave.
- Wrap the bacon slice around the inside of a muffin/cupcake cup making a ring.
- If your muffin/cupcake pan isn’t non-stick, then put a 1/4 teaspoon of melted coconut into the base of the pan – this is just to prevent the egg sticking to the cup.
- Crack the egg into the muffin/cupcake cup – don’t worry, it shouldn’t overflow.
- Bake for 15 minutes.
- Mix together the almond flour and garlic powder. Sprinkle on top of the muffins and serve.
