I didn’t know this was a thing, but I recently met a guy that hunts mushrooms for kicks. He takes his daughter out and they hike around identifying different varieties.

It’s somehow adorable and dorky at the same time.

Rest assured, you don’t have to go out to the woods to make this recipe. You can find what you need easily in the produce section of the grocery store.

What you might not know is that there are many different varieties of mushrooms beyond the buttons and portabellas that everyone seems to be so familiar with.

Let’s start with the buttons, as this recipe calls for white button mushrooms. No hunting is necessary for these guys – you’ll find them in the supermarket year round.

White buttons have a subtle earthy flavor that won’t overpower the dish. The vast majority of edible mushrooms are buttons.

Portabellas are the other big player in the mushroom world. These larger mushrooms often stand in for meat, and sometimes they’re used as a bun.

Creminis sometimes called “baby bellas,” are young portabella mushrooms. Their mild flavor makes them a nice substitute for white button mushrooms – you could use them for this broccoli bake.

You’ve probably also heard of shiitake mushrooms as well. These mushrooms feature a lovely umami flavor that is utilized in many Asian dishes.

You’re unlikely to find chanterelles at the grocery store, but they have a pretty cool shape. These golden mushrooms fan out like a flowery trumpet. When eaten, they have a fruity essence.

Description

Have this keto chicken mushroom broccoli bake recipe on the ready for when the mercury drops!


Ingredients

  • 2 Tablespoons of ghee (30 ml), for greasing baking dish
  • 10 slices of bacon (280 g), diced
  • 1/4 cup of coconut oil (60 ml), to cook chicken in
  • 3 chicken breasts, diced
  • 2 heads of broccoli (900 g), broken into small florets
  • 10 white button mushrooms (100 g), diced
  • 1/2 medium onion (55 g), diced
  • 2 cups of coconut milk (480 ml), from cans
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 350 F (175 C). Grease a large baking dish with the ghee and set aside. (Place any excess ghee in the bottom of the baking dish.)
  2. In a large nonstick skillet over medium-high heat, add the bacon and sauté until crispy, about 5 minutes. Remove the bacon from the skillet with a slotted spoon and set aside.
  3. In the same skillet, melt the coconut oil with the bacon grease over medium-high heat. Add the chicken to the skillet and sauté until cooked through about 10 minutes. Season with salt, to taste. Remove from the heat and let cool slightly.
  4. In a food processor, blend the broccoli, onion, and coconut milk to form a rough puree.  Season with salt and pepper, to taste.
  5. Pour the puree into the bottom of the greased baking dish.  Sprinkle the bacon, chicken, and mushrooms on top.
  6. Place the baking dish in the oven and bake for 1 hour.
