If you can’t believe it, check out our Keto vanilla pound cake recipe for yourself. This cake uses almond flour to replicate the dense and tender crumb you know and love. You can even add some whey protein powder for a little added healthy boost. With or without the protein, you can be sure this recipe will be a hit. Try it once and you just might find yourself making this new classic again and again.

Know Your Pound Cake History?

Did you know that the original pound cake recipe contained no baking powder or baking soda? They had only four ingredients, one pound each of butter, sugar, flour, and eggs. That’s how the recipe got its name. Without added leavening agents, all of the rise came from the air whipped into the batter. That’s a lot of whipping, and it was all done by hand!

The first pound cake was made sometime in the early 18th century and by the late 18th century, it was appearing in recipe books. As the years went by, the recipe gradually changed to make a less dense cake, with the ingredients no longer all weighing exactly one pound. These ratios changed even further in the 1900s when baking powder and baking soda were added to the recipe. However, the name, pound cake, has stuck around to this day.

Toppings to Die For

Pound cake is such a lovely simple recipe. It can be enjoyed on its own, but it is also an excellent canvas for a number of toppings. Just remember that adding ingredients may change the nutritional values and read on for some suggestions.

  • Classic – Serve with a spoonful of Keto coconut whipped cream and a sprig of fresh mint.
  • Berry Good – Serve with chopped or lightly mashed fresh berries, depending on ripeness and personal preference. If you don’t have any fresh berries, you can use frozen, but pureeing is recommended.
  • Jam-boree – Swirl batter with Keto-friendly jam before baking to create a lovely marbled fruit effect.
  • (Coco)Nuts About Cake – Sprinkle with toasted sliced almonds, toasted coconut flakes or a combination of both.
