If you’re looking for the perfect canvas for a nutritious and low-carb lunch or dinner, look no further than this Keto crockpot shredded chicken! It couldn’t be easier to make and only requires 5 minutes of hands-on time. Make a batch on a lazy Sunday afternoon and enjoy juicy, flavorful chicken all week long.

Three Tips for Choosing the Perfect Chicken

  • Buy fresh – If possible, always try to buy chicken labeled “fresh.” Chicken has a high water content and there is a clear difference in texture, and even taste, between chicken that has been frozen and thawed and chicken that has never been frozen. Plus, if the chicken has already been frozen and thawed at the store, the texture will be impacted further if you want to freeze it at home before using.
  • Always check the label – Like the “fresh” designation, there is a wealth of information to be found on the label of your chicken from additives to a quality grade. If you want to know what you’re eating, label reading is a must. Just make sure you’re up to date on the lingo, some processors use deliberately confusing labels.
  • Buy bone in – Buying bone in will usually save you money and as a bonus, your chicken will be more flavorful and moist. Taking out a bone after cooking is no hardship in an easy crockpot recipe like this one and those bones can be added to stock (or broth) for extra flavor, and collagen!

This Kitchen Hack Will Cut Your Shredding Time in Half

Love shredded chicken but don’t want to fiddle around with a fork all afternoon? Here’s a kitchen hack that will give you perfectly shredded chicken in the blink of an eye.

Simply place your still warm cooked chicken breasts (with any bones removed) in the bowl of a stand mixer with the paddle attachment. Switch the mixer to medium and turn off when chicken is uniformly shredded!

If you don’t have a stand mixer, you can also do this with a hand mixer. Just cut your chicken breasts into two or three pieces and work in batches.
