Ingredients

  • 1 ½ tomatoes (135 g), chopped
  • 1 cucumber (120 g), peeled, seeded, and chopped
  • ¼ white onion (28 g), chopped
  • 2 garlic cloves (6 g)
  • ½ green bell pepper (60 g), seeded and chopped
  • 2 tablespoons (30 ml) of olive oil
  • 1 cup (240 ml) vegetable broth
  • salt and pepper, to taste

Instructions

  1. Add all the ingredients to a blender or food processor.
  2. Blend until you get a smooth mixture.
  3. Transfer the mixture to a pan and cook, covered, for 5 minutes.
  4. Let it refrigerate for 1 hour.
  5. Optionally garnish with chopped bell pepper and tomatoes.
