When I purchased my air fryer, one of the first recipes I wanted to make was corn dogs! 

I had tried to make Keto corn dogs before, but they turned out to be just right. Either the flavor was just not the same or they were a mess to make – and usually both!

Who has time to clean up all of that mess from dipping the hot dogs in batter and then frying them in a traditional deep fat fryer?

Not me, that’s for sure!

So, when I decided to try to make corn dogs in the air fryer, I decided to make them as muffins to make cooking and the cleanup as easy as possible.

And let me tell you that these corn dog muffins are delicious and cleanup is a breeze. 

But the taste is the real star of the recipe. You’ll never even guess they are Keto, and you don’t have to feel guilty eating them since each one has just 2 g net carbs! 

So, go ahead and have several muffins! They are too good to stop at just one.

Air Fryer Cooking Tips

When I first bought my air fryer, I was completely intimidated by it and even thought about returning it to the store for a refund.

And I’m so glad that I didn’t because I use it at least several times a week for fast but delicious Keto meals.

Unfortunately, the first few recipes that I tried were not successful. And, in all honesty, they could easily be called disasters.

However, I don’t want you to have to go through the same trial-and-errors that I went through while learning how to use an air fryer.

So, I’m going to share my best tips with you so each recipe turns out perfectly.

Always preheat your air fryer before using it. When I used my air fryer for the first time, I thought I could turn it on right before I put in the food and it would turn out perfectly. 

Nope! I quickly found out that air fryers need to be preheated in order for the food to cook perfectly. 

However, it just takes a few minutes for air fryers to preheat. So, if you forget to turn it on before you start prepping your ingredients, just turn it on as soon as you remember.

Resist overcrowding the air fryer basket or tray. I understand that you want your entire meal cooked quickly and at the same time. However, that isn’t always possible with an air fryer.

Depending on the size of your air fryer, you might need to cook your food in several batches.

Air fryers work by circulating extremely hot air around the food in order to cook the food. If you put too much food in your air fryer, the hot air won’t be able to circulate properly, which results in uneven or undercooked food.

However, air fryers cook pretty quickly. So, you shouldn’t have to wait too long in between batches.

Shake the air fryer basket or tray halfway through the cooking time. This helps to ensure the food is cooked evenly on all sides. This is especially important when cooking chicken wings, low carb vegetables, etc.

For larger foods, I like to use kitchen tongs to flip the food or even to stir the food during cooking.

Since the muffins are being cooked in muffin cups, you don’t have to shake the tray. But I still did it out of habit.

Lightly spray your food with avocado oil or olive oil. This is especially true with breaded food or anything you want to get crispy, like my Keto Air Fryer Chicken Tenders Recipe.

However, you don’t need to spray these corn dog muffins since they don’t need to be crispy.

But be sure to stay away from using store-bought aerosol sprays, which contain corrosive ingredients that could ruin the air fryer basket or tray’s non-stick coating.

Lightly grease your air fryer basket or tray before adding food. I know I just said that they have non-stick coatings, but it’s really important to still lightly grease the baskets or trays to help prevent food from sticking.

And it helps to make cleanup even easier, and I think I’ve made it clear how much I love easy cleanup.

However, this is a must for any food that directly touches the air fryer basket or tray. If you are cooking food on parchment paper or in muffin cups (like this recipe), you likely don’t need to grease the basket or tray.

Enjoy all of the taste of corn dogs but without all of the carbs when you make these Keto Air Fryer Corn Dog Muffins.

Instructions

  1. Preheat the air fryer to 350 F (175 C). Cut each hot dog in half and set aside until ready to use.
  2. Combine the remaining ingredients in a large bowl to make a smooth batter. Spoon the batter into 6 silicone muffin cups until each cup is about 2/3 full. Gently press a halved hot dog into the center of each muffin. 
  3. Place the muffin cups in the air fryer basket or tray. (If needed, cook the muffins in several batches.)
  4. Cook the muffins for 12 to 15 minutes until cooked through and a toothpick inserted into the muffins comes out clean. Use a meat thermometer to check the internal temperature of the hot dogs reaches 165 F (73 C). 
  5. Carefully remove the muffins from the air fryer and let cool for about 5 minutes before serving.
