Keto Dairy-Free Scalloped “Potatoes” Recipe

Honestly, I’ve been making a Keto version of scalloped potatoes for years, and it was okay. It was a dish that my family ate at the holidays, but there were always plenty of leftovers. 

And why were there always plenty of leftovers? My guess is because it was made using cauliflower.

Don’t get me wrong – there are plenty of delicious Keto versions of scalloped potatoes using cauliflower, but mine wasn’t one of them.

So, I decided to create an entirely new recipe, and it is absolutely delicious.

And my family agrees as well! 

Plus, the recipe is completely dairy-free. So, if you have any family members who are sensitive to dairy or if you have any vegan family members, this is the perfect holiday recipe.

But it is also delicious anytime of year and not just at the holidays.

Keto Snickerdoodle Muffins Recipe

It is no secret that I love muffins. They are easy grab-and-go breakfasts for those busy mornings that you don’t want to cook. 

And they make delicious snacks as well!

Even better, this recipe uses easy-to-find ingredients, which is important to me. Trust me, I don’t want to go from store-to-store or spending hours online searching for ingredients. And I know you don’t want to do that either.

If you have done any Keto baking, you probably have most (if not all) of these ingredients on hand already. 

And if you don’t, you can probably find them at your local grocery store. And, of course, they are easy to find online as well.

Keto Thanksgiving Stuffing Recipe

I know that turkey always gets the most attention at Thanksgiving, but I always thought that stuffing should be the star of the meal.

For the last few years, I’ve been on a mission to create a delicious stuffing recipe that is not only Keto but is easy to make.

And I’m so happy to announce that I did it with this Keto Thanksgiving Stuffing recipe. 

It has all of the flavors of traditional stuffing but without all of the carbs. And it’s super easy to make. 

Plus, you can prep most of the recipe in advance and put it in the oven to bake while your turkey is resting.

Just prepare the recipe up to step 4. If you are using a casserole dish, go ahead and place the stuffing in it and refrigerate until you are ready to cook.

Remove the stuffing from the refrigerator about an hour before you plan to cook to bring it to room temperature. This is especially important if you are using a glass casserole dish that could shatter if you place it in a hot oven straight from the refrigerator.

Add the chicken broth and almond flour right before you put the dish in the oven. And in about 25 minutes, you’ll have a piping hot stuffing dish that your entire family will love!

Keto Iced Gingerbread Loaf Recipe

There are some flavors that go hand-in-hand with the holiday season, and gingerbread is one of them.

And gingerbread is one of those flavors that bring back memories of winter holidays when I was growing up.

Keto Air Fryer Corn Dog Muffins Recipe

When I purchased my air fryer, one of the first recipes I wanted to make was corn dogs! 

I had tried to make Keto corn dogs before, but they turned out to be just right. Either the flavor was just not the same or they were a mess to make – and usually both!

Who has time to clean up all of that mess from dipping the hot dogs in batter and then frying them in a traditional deep fat fryer?

Not me, that’s for sure!

So, when I decided to try to make corn dogs in the air fryer, I decided to make them as muffins to make cooking and the cleanup as easy as possible.

And let me tell you that these corn dog muffins are delicious and cleanup is a breeze. 

But the taste is the real star of the recipe. You’ll never even guess they are Keto, and you don’t have to feel guilty eating them since each one has just 2 g net carbs! 

So, go ahead and have several muffins! They are too good to stop at just one.

Keto Gingerbread Muffins Recipe

Even just the smell of anything gingerbread puts me in the holiday spirit.
