Potato pancakes may be off the table with Keto, but this Keto turmeric cauliflower pancakes recipe is a tasty alternative.

How I Made This Keto

Spoiler alert: Potatoes are not Keto. These starchy tubers may taste good, but you won’t find them in any ketogenic recipes.

The good news is that there are lots of alternatives you can make to get a similar product without all the carbs.

The first switch is pretty obvious. We’ll use cauliflower florets instead of potatoes. Done.

The oil and cooking method is another change. Traditional potato pancakes may have you frying up your snack in canola oil.

This recipe takes a different approach, using just enough coconut oil to grease a baking tray. We’ll skip the frying.

Potato pancakes might also have flour and breadcrumbs. Because apparently there aren’t enough carbs in the potatoes.

This recipe calls for almond flour instead, taking advantage of a nut-based flour to cut the grain carbs.

The egg, garlic, salt, and pepper can be added per usual, but there is one more surprise ingredient: turmeric.

Description

These cauliflower pancakes pack some extra health benefits, not to mention taste,  with the added turmeric.


Ingredients

  • 1 head of cauliflower, broken into florets
  • 2 eggs, whisked
  • 1 cup (120 g) of almond flour
  • 2 Tablespoons (12 g) turmeric powder
  • 2 cloves of garlic, peeled and minced
  • 1 Tablespoon (15 ml) of coconut oil, for greasing the baking tray
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 350 F (175 C).
  2. Steam the cauliflower florets until softened.
  3. Mash the cauliflower and mix with the eggs and almond flour. Season with salt and pepper and turmeric powder.
  4. Form 8 flat patties. Place on a greased baking tray and bake for 30 minutes until slightly browned.
