For some reason when it comes to side vegetables, we can all be a little… boring. Not that your steamed broccoli or sautéed carrots aren’t delicious. We all have a certain side vegetable that is easy to throw together whenever we are putting together a bigger meal.
Well, it is time to switch things up and try something new. It starts at the grocery store with picking out a vegetable that you don’t eat all of the time. And, then finding new ways of cooking it up that is different from the usual. This Keto mustard celeriac mash recipe is a great unique choice to add some life to your dinner.
What Exactly is Celeriac?
It is okay if you haven’t heard of celeriac before. In fact, there are lots of people that have never tried it before. It is not as popular as some of the other easy to assemble vegetables in the produce aisles.
Celeriac is a type of celery that develops a large root that is much like a turnip. It can be eaten raw or cooked, and it offers an intense flavor. Mashing celeriac is a common method and it offers the chance to add some extra tastes.
Cooking Up Celeriac
As I mentioned, celeriac is great cooked or raw and it can be used in a variety of dishes. For the simplicity of this recipe, we have you boil diced pieces of celeriac, but the tender vegetable can be cooked thoroughly in any method.
You may choose to sauté the celeriac in a bit of oil instead of boiling it. The vegetable fries up nicely, and if you cook it completely through it should be able to mash as easily as it is when boiled.

Ingredients
- 1 lb (450 g) celeriac, peeled
- 2 Tablespoons (30 ml) olive oil
- 1 Tablespoon (15 ml) mustard
- 2 Tablespoons thyme leaves, divided
- Salt and pepper, to taste
Instructions
- Chop the celeriac into small cubes and boil for 25 minutes with salt and 1 Tablespoon of thyme leaves until tender.
- Food process or blend with the olive oil and mustard.
- Stir in the rest of the thyme leaves and season with salt and pepper, to taste.
