Ingredients

  • 1 lb (450 g) celeriac, peeled
  • 2 Tablespoons (30 ml) olive oil
  • 1 Tablespoon (15 ml) mustard
  • 2 Tablespoons thyme leaves, divided
  • Salt and pepper, to taste

Instructions

  1. Chop the celeriac into small cubes and boil for 25 minutes with salt and 1 Tablespoon of thyme leaves until tender.
  2. Food process or blend with the olive oil and mustard.
  3. Stir in the rest of the thyme leaves and season with salt and pepper, to taste.
