A Happy Accident

The Cobb Salad is one of the most popular salads out there, found on restaurant menus across the country, but its entire existence was little more than a lucky coincidence! The salad was invented in 1937 by Bob Cobb, the manager of the famous Brown Derby restaurant. Rather than a dish off the menu, the legendary salad began life as a way to use up leftovers at the end of a long day. The original salad used everything Cobb found in the icebox; avocado, celery, tomato, chives, watercress, chicken, bacon and Roquefort cheese, all on a bed of lettuce. Cobb mentioned the end of day dish to a customer who demanded to try the salad for himself and the rest, as they say, is history [1].

Is Cobb Salad Keto?

The classic Cobb Salad is very similar to the original. It typically includes chicken, bacon, hardboiled eggs, tomatoes, avocado, blue cheese, vinaigrette dressing, and lettuce. Our Keto Cobb Salad is a streamlined version that keeps all the flavor and cuts out the dairy.

This low-carb Cobb Salad is perfect for entertaining because nearly all of the components can be prepared ahead of time.

  • Cooked chicken can be stored in the fridge for 3-4 days if tightly covered.
  • Cooked bacon wrapped in heavy duty foil or cling wrap can be stored for 4-5 days in the fridge.
  • Hardboiled eggs can be safely stored the in fridge for up to a week.
  • The tomato and romaine can be chopped the night before and stored in airtight containers.
  • The dressing can be made up to 2 weeks in advance and stored, tightly covered, in the fridge.
  • To serve, simple dice avocado and proceed as directed.

Description

This salad is the perfect blend of salty, savory, fresh, and creamy.


Ingredients

For the salad –

  • 1 head of romaine lettuce, chopped
  • 1 tomato, diced
  • 4 slices of bacon, cooked and chopped into bits
  • 1 chicken breast, diced
  • 2 Tablespoons (30 ml) coconut oil, to cook chicken with
  • 2 eggs, hard-boiled
  • 1 avocado, diced

For the dressing –

  • 4 Tablespoons (60 ml) red wine vinegar or lemon juice or lime juice
  • 1 Tablespoon (15 ml) mustard
  • 1/2 cup (120 ml) olive oil
  • Salt and pepper, to taste

Instructions

  1. Saute the diced chicken breast in the coconut oil.
  2. Hard-boil the eggs.
  3. Cook the bacon and chop it into bits.
  4. Mix the dressing together.
  5. Toss all the ingredients together with the dressing.
