Description
This quiche is smoky and savory.
Ingredients
- 1/4 cup (60 ml) coconut oil, to cook with
- 1 medium onion, peeled and diced
- 4 cups (120 g) spinach, chopped
- 2 small tomatoes, diced
- 8 oz (225 g) smoked salmon, chopped
- 12 eggs, whisked
- 1/4 cup (4 g) parsley, chopped
- 1/4 cup (60 ml) lemon juice
- 3/4 cup (180 ml) coconut cream (from the top of 1 refrigerated can of coconut milk)
- Salt and pepper, to taste
- Lemon wedges, to serve with
Instructions
- Preheat oven to 350 F (175 C).
- Add coconut oil to a large frying pan and cook the onions, spinach, tomatoes, smoked salmon, and lemon juice until slightly browned.
- Remove and let cool for 10 minutes.
- Combine with rest of ingredients and pour into a 9-inch by 9-inch (23-cm by 23-cm) square baking dish.
- Place in the oven and bake for 30 minutes until the eggs are soft but set.
- Let cool, slice and serve with additional lemon wedges.
