Description

This quiche is smoky and savory.


Ingredients

  • 1/4 cup (60 ml) coconut oil, to cook with
  • 1 medium onion, peeled and diced
  • 4 cups (120 g) spinach, chopped
  • 2 small tomatoes, diced
  • 8 oz (225 g) smoked salmon, chopped
  • 12 eggs, whisked
  • 1/4 cup (4 g) parsley, chopped
  • 1/4 cup (60 ml) lemon juice
  • 3/4 cup (180 ml) coconut cream (from the top of 1 refrigerated can of coconut milk)
  • Salt and pepper, to taste
  • Lemon wedges, to serve with

Instructions

  1. Preheat oven to 350 F (175 C).
  2. Add coconut oil to a large frying pan and cook the onions, spinach, tomatoes, smoked salmon, and lemon juice until slightly browned.
  3. Remove and let cool for 10 minutes.
  4. Combine with rest of ingredients and pour into a 9-inch by 9-inch (23-cm by 23-cm) square baking dish.
  5. Place in the oven and bake for 30 minutes until the eggs are soft but set.
  6. Let cool, slice and serve with additional lemon wedges.
