Keto Walnut Encrusted Salmon

Ingredients

  • ½ cup (60 g) of walnuts
  • ½ Tablespoon (8 ml) of Dijon mustard
  • 2 Tablespoons (24 g) of stevia 
  • ¼ teaspoon of dill
  • 1 Tablespoon (15 ml) of olive oil
  • 2 Salmon fillets (3 oz or 85 g each)
  • Salt and pepper, to taste 

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Add the walnuts, mustard, stevia, dill, salt, and pepper to a food processor and process until your desired consistency is achieved.
  3. Take a frying pan and place it over medium heat.
  4. Add the olive oil to the pan and let it heat up.
  5. Add the salmon to the pan and sear for 3 minutes on each side.
  6. Add the walnut mix and coat the salmon well.
  7. Transfer the coated salmon to a baking sheet, and bake in the oven for 8 minutes.
  8. Serve and enjoy!
