Description

Simple dairy-free vanilla ice cream to enjoy however you choose.


Ingredients

  • 1 cup (240 ml) of coconut cream (from the top of cans of refrigerated coconut milk)
  • 1 cup (240 ml) coconut milk
  • 4 egg yolks, whisked
  • 2 Tablespoons (30 ml) vanilla extract
  • 2 teaspoons vanilla paste (optional)
  • 2 Tablespoons erythritol + stevia, to taste
  • Stevia, to taste

Instructions

  1. Place the ice cream machine bowl into the freezer the night before.
  2. Add coconut cream and coconut milk to a small saucepan.  Add in the whisked egg yolks to combine.  Heat up the mixture until it reaches 158 F (70 C). Add in the vanilla extract and sweetener.
  3. Let it cool down to room temperature, then pour into the machine bowl and churn for 35 minutes.
