Description
An unfussy muffin recipe for any occasion.
Ingredients
- 0.85 cup (200 ml) coconut butter, warmed slightly (including the coconut oil in the coconut butter jar)
- 3 eggs, whisked
- 1 teaspoon (5 ml) vanilla extract
- 1/4 cup (48 g) erythritol
- Dash of stevia, to taste
- 2 Tablespoons chia seed
- 1 teaspoon baking powder
Instructions
- Preheat oven to 350 F (175 C).
- Mix together all the ingredients in a large mixing bowl. Use a hand whisk if necessary.
- Pour into muffin pans (use silicone muffin pans or grease the metal pans). Makes 9 muffins.
- Bake for 16-18 minutes until a toothpick comes out clean when you insert it into a muffin.
