An unfussy muffin recipe for any occasion.

Instructions

  1. Preheat oven to 350 F (175 C).
  2. Mix together all the ingredients in a large mixing bowl.  Use a hand whisk if necessary.
  3. Pour into muffin pans (use silicone muffin pans or grease the metal pans). Makes 9 muffins.
  4. Bake for 16-18 minutes until a toothpick comes out clean when you insert it into a muffin.
