Ingredients
- 1 cup (124 g) of cauliflower rice, cooked and cooled
- ¾ cup (90 g) of Keto-friendly protein powder
- ½ cup (70 g) of ground peanuts
- 3 eggs
- 1 tablespoon (15 ml) of coconut oil
- 4 teaspoons (16 g) of stevia
- 1 teaspoon (2 g) of baking powder
- 1 tablespoon (6 g) of ground cinnamon
- 2 tablespoons (30 ml) of ghee, melted
Instructions
- Preheat your oven to 350°F. Grease a muffin tin and set aside.
- Add the cauliflower, protein powder, ground peanuts, eggs, coconut oil, stevia, and baking powder to your blender. Blend until just fully incorporated.
- Pour the batter equally into the muffin tin.
- In a bowl, mix the cinnamon and ghee. Pour ½ teaspoon of the mix on top of each muffin, and swirl using a toothpick.
- Bake for 10 – 15 minutes.
- Remove from the oven and let them cool.
- Serve and enjoy!
