Ingredients

  • 2 oz (56 g) of pepperoni slices
  • 1 tomato, sliced
  • 6 olives
  • 2 Tablespoons (30 ml) of olive oil
  • 2 cups of spinach or 1 head of romaine lettuce, chopped
  • Salt and pepper, to taste

Instructions

  1. Toss the olive oil with the spinach or romaine lettuce and salt and pepper.
  2. Top with pepperoni slices, tomato slices, and the olives.
  3. Enjoy as a side salad or appetizer or double the serving and eat as dinner.
