Description

This citrus pork loin is a delicious way to end the day.


Ingredients

  • 3 lbs of pork loin (1.4 kg)
  • Juice from 2 small oranges
  • Juice from 1 lemon
  • Juice from 1 lime
  • 3 Tablespoons of fresh rosemary leaves
  • 5 cloves of garlic, sliced
  • 3 Tablespoons (45 ml) of olive oil
  • Salt and pepper, to taste
  • 2 Tablespoons (12 g) paprika

Instructions

  1. Preheat oven to 400 F (200 C).
  2. Rub the pork loin all over with olive oil and sprinkle with salt, pepper, and paprika.  Rub the garlic and rosemary over the pork as well.
  3. Mix the juices together.
  4. Place the pork loin in a deep baking dish and pour 1/2 of the juices over the pork.
  5. Bake in the oven for 1 hour.  Every 20 minutes, pour some of the leftover juices over the pork loin and flip the loin.
  6. Remove from oven when its internal temperature of the pork loin reaches 145 F (63 C).  It’ll keep cooking a bit more after you take it out from the oven.
