Ingredients
For the keto bread-
- 1/3 cup (35 g) almond flour
- 1/2 teaspoon (2 g) baking powder
- 1 egg, whisked
- 2 and 1/2 tablespoons (37 ml) ghee, melted
- Dash of stevia
French toast mixture –
- 1/4 cup (60 ml) coconut cream
- 1/4 cup (60 ml) ghee, melted
- 2 eggs, whisked
- 1/4 cup (48 g) erythritol
- 1 Tablespoon (15 ml) vanilla extract
- 1 Tablespoon ground cinnamon
Instructions
- Preheat oven to 350 F (175 C).
- Mix the bread ingredients together in a microwaveable bowl and microwave for 2 minutes on high heat.
- Let cool and chop into cubes.
- Grease muffin cups with ghee. Divide the chopped cubes of bread between 4 muffin cups.
- In a bowl, mix together the French toast mixture. Divide and pour into the 4 muffin cups and let soak for 20 minutes.
- Bake for 20 minutes.
