Description
This simple soup is infused with ginger and onions.
Ingredients
- 3 1/2 cups (840 ml) of good quality chicken broth
- 2 teaspoons (10 ml) of gluten-free tamari sauce
- 1 thumb-sized piece of fresh ginger, peeled and sliced
- 3 medium eggs (132 g)
- 4 green onions (20 g), sliced to garnish
Instructions
- Place the chicken broth in a pan on the stovetop. Stir in the tamari and add the sliced ginger. Simmer on low heat for 2-3 minutes.
- Strain the stock into a clean pan, discarding the ginger. Keep over low heat while you whisk the eggs in a separate bowl.
- Remove the pan of broth from the heat and drizzle the eggs into the broth in a thin stream, stirring gently.
- Serve immediately, garnished with sliced green onions.
