Description

This yummy curry is a strong tool in your Thai arsenal.


Ingredients

  • 1/2 onion, diced
  • 2 chicken breasts, diced
  • 3 Tablespoons (45 ml) coconut oil, to cook with
  • 2 cups (480 ml) coconut milk
  • 3 Tablespoons curry powder
  • 1 Tablespoon ginger, minced
  • 1 Tablespoon (15 ml) fish sauce
  • 1/4 cup (60 ml) almond butter
  • 2 Tablespoons (30 ml) lime juice
  • 1 Daikon radish (300 g), peeled and diced
  • 2 Tablespoons cilantro, chopped
  • Salt and pepper, to taste

Instructions

  1. Add coconut oil to a large pan and brown the onions.  Then add the chicken and brown.
  2. Add coconut milk, curry powder, ginger, fish sauce, almond butter, daikon radishes, and lime juice and simmer for 15 minutes.  Add in cilantro and salt to taste.
