- Preheat oven to 350 F (175 C).
- Line a muffin tray with liners or grease well or use a silicone muffin tray.
- Cook the bacon and then cook the diced chicken breast in the leftover bacon fat. Let cool for a few minutes.
- In a large bowl, combine the whisked eggs, bell pepper, onion, cooked chicken, and bacon together.
- Spoon the mixture into the muffin trays and bake 30 minutes.
