Slow Cooker Ground Pork with Cauliflower Fried Rice

This meaty sauce is extra tasty due to all the cooking in the crock-pot that happens for hours.

But while it’s cooking away, you can have a rest. Safe in the knowledge that dinner will be on the table on time.

And the best part is you can make a large batch of this meaty sauce, pack it into small containers and freeze. Then just defrost and enjoy anytime (it’s great for a fast lunch).

To serve with this meaty sauce, I suggest a cauliflower fried rice – it’ll soak up the flavors from the sauce really well as well as provide you with extra fiber and nutrition.

The result will amaze you because the meat will get extra-tender, the tomatoes will add a delicious flavor and will increase that sauce’s taste… Yum!

If you don’t have bone broth, note that you can use any other kind of broth (chicken, beef) or you can simply add plain water.

Ingredients

Ingredients for the meat sauce:

  • 1/2 medium onion, finely diced
  • 3 cloves of garlic, minced or finely diced
  • 2 lbs of ground pork (or other meats)
  • 1/2 cup (120 ml) tomato sauce or diced tomatoes
  • 1 Tablespoon Italian seasoning
  • 1/2 cup (120 ml) bone broth (or other broth)
  • Salt and pepper, to taste

Ingredients for the cauliflower rice:

  • 1 cauliflower, broken into florets
  • 2 Tablespoons (30 ml) avocado oil, to cook with
  • ½ carrot
  • Salt and pepper, to taste

Instructions

  1. To make the meat sauce, add all the meat sauce ingredients to a slow cooker and set on low heat for 6 hours.
  2. To make the cauliflower rice, add the florets and carrots to a food processor and food process into small rice-like pieces.  Squeeze out as much excess liquid as possible.
  3. Add avocado oil to a large skillet and in batches, cook the cauliflower rice until softened (approx. 10 minutes). Season with salt and pepper, to taste.
  4. Ladle the meat sauce on the cauliflower rice and enjoy. Garnish with fresh herbs like chopped basil if desired.
