Keto Strawberry Cream Jello Salad Recipe

Nothing screams summer like strawberries and jello salad.



  1. Heat up the water so it’s hot.  Pour into a bowl.  Sprinkle the gelatin powder on top and let it sit for a few minutes to bloom.  Then whisk it in well so there are no lumps.  You can microwave the mixture or put into a water bath if you’re having trouble dissolving it.
  2. Puree the strawberries, cream, vanilla extract, and stevia.  Pour the puree mixture into the gelatin mixture and mix well.
  3. Refrigerate for 30 minutes so it starts to set.  Then remove and stir in the chopped strawberries.  If the jello is already set, then just microwave for a few seconds. (You want to add in the chopped strawberries later so that they don’t all sink to the bottom.)
  4. Put back into the fridge to set for 4+ hours or overnight.
