Egg salad is one of those classic dishes that most of us were raised on. It has been a staple for a quick lunch for generations of parents. I would be shocked if you told me you didn’t have an egg salad recipe that was part of your childhood. Everybody has their own way of making it, and everyone has certain ingredients that are a must.
On the other hand, sometimes it is great to explore and try an egg salad that isn’t the same way you have been eating it all of your life. That is why this Keto special sauce egg salad is worth a try. There may be some ingredients that you’ve never tried in your recipe that could be that one piece that has been missing.
How Do You Like Your Eggs?
There are plenty of ways to get your hard boiled eggs ready for an egg salad. Even cooking the eggs, I know that some people prefer to have the yolks completely cooked, while others prefer if there is still some brightness to them. If you want them a bit softer 4-5 minutes in boiling water will do. For a wholly cooked yolk, aim for 7-9 minutes.
Then there is how you like it chopped. Many people enjoy dicing the hard-boiled egg for a nice chunk to their salad mix. However, I would recommend trying to grate the egg on a cheese grater. This makes for a great consistency to an egg salad. Of course, it is all up to you.
What Makes This Egg Salad Special?
There are a couple of unique ingredients that you don’t always see in this egg salad recipe. One of them is mustard, which I was skeptical about at first. I actually had to ask a friend if they had ever heard of this before, and she assured me that she has tried mustard in her egg salad plenty of times. She was right, it adds some great flavor to the mix.
However, for me, it was the tomato paste and bacon bits that genuinely puts this recipe over the top. Just a hint of tomato paste offers a subtle flavor, much for the same reasons people love paprika in their mix. And, bacon, well who doesn’t love bacon?

Ingredients
- 4 eggs
- 2 Tablespoons bacon bits
- 1 stalk of celery, chopped
- 2 Tablespoons (30 ml) mayo, or to taste
- 1 teaspoon (5 ml) tomato paste
- 2 teaspoons (10 ml) mustard
- Salt and pepper, to taste
Instructions
- Hard boil the eggs. Cool them by running them under cold water and then peel.
- Chop the eggs into small pieces.
- Toss with all the other ingredients and season with salt and pepper, to taste.
