Ingredients

  • 3 Tablespoons (45 ml) of olive oil, to cook with
  • 1 medium onion, peeled and diced
  • 1 medium green bell pepper, diced
  • 2 cloves of garlic, peeled and minced
  • 2 14-oz (400 g) cans of diced tomatoes
  • 2 Tablespoons of fresh basil leaves
  • Salt and pepper, to taste
  • Stevia, to taste

Instructions

  1. Add olive oil to a large saucepan and saute the onions, bell pepper, and garlic until browned.
  2. Then add in the diced tomatoes and simmer for 20 minutes.
  3. Add in the basil leaves.  Season with salt, pepper, and stevia, to taste.
