How I Made This Keto

Ever look at a photo and say it’s too good to be keto? That’s exactly what came to mind when I finished this recipe.

It looks like a fudgy, chocolatey jar topped with marshmallows – and what could possibly be keto about that?

Trust me, it is, and when you see what’s really in it you’ll understand how I was able to pull off this masterpiece without relying on sugar.

At the bottom of the jar is graham crackers, but they aren’t your ordinary graham crackers. My recipe uses almond flour, flax meal, erythritol, and cinnamon to make a keto-friendly dessert cracker. For this jar, you’ll crumble those up with some ghee and a bit of salt to form the base of the jar.

Next up is the keto chocolate mug cake. This quick recipe will add the next layer of comfort food to the jar in the form of delicious cake.

Arguably the best layer comes next with the ganache. I made mine using 100% dark chocolate, coconut cream, and erythritol. It’s important to make sure you get 100% dark chocolate, as lesser percentages contain sugar.

Then we have the marshmallows. As nice as it would be to pop in some pre-made store-bought marshmallows, they aren’t remotely keto. You have to make your own, but they’re really good!

Just make sure to work on the marshmallows a day ahead, because they need to set up in your refrigerator overnight. I like to cut them into smaller chunks to use in this s’mores jar.

A Note on Serving Size

As tempting as it might be to grab a spoon and go to town on this s’mores mug, you will regret it.

The serving size (and appropriate amount for one person) is one-quarter of the mug. You’ll probably want to eat more than that, so here are some suggestions.

If you’re having company or you’re serving a family, that will help you. It wouldn’t be very kind to eat all of the food you made for friends or family!

If you’re a party of two, agree with your partner to stop at the halfway point and save the rest for the next day.

Alternatively, if this s’mores cake is just for you, or you and your partner have zero willpower, distribute the cake layers into four containers from the get-go.

That way, you’ll enjoy the cake jar experience without overindulging.

Ingredients

For one 16-oz mason jar

 For the graham cracker crust – 

For the chocolate cake layer – 

For the chocolate ganache – 

For the marshmallow layer –


Instructions

  1. Food process the graham crackers, ghee, and salt until it forms a crumbly mixture. Place at the bottom of the jar.
  2. Add the chopped chocolate cake to the jar and press down.
  3. In a saucepan, heat up the coconut cream and melt the chocolate and add the erythritol. Let cool and then pour into the jar saving 1-2 Tablespoons for drizzling on top.
  4. Top with the small marshmallow cubes.
  5. Drizzle the rest of the chocolate ganache on top.
