Keto Smoked Salmon Salad with Poached Egg

Ingredients

  • 1 large handful of salad greens (I used arugula)
  • 2 Tablespoons (30 ml) olive oil
  • 1 teaspoon (5 ml) freshly squeezed lemon juice
  • 100 g smoked salmon slices
  • 2 Tablespoons pistachios, crushed
  • 1 poached egg

Instructions

  1. Place a large handful of salad greens into a bowl and toss with 1 tablespoon of olive oil and 1 teaspoon lemon juice.
  2. Add the slices of smoked salmon on top of the salad greens.
  3. Poach an egg (see this recipe for more detailed instructions).
  4. Place the poached egg on top of the smoked salmon.
  5. Sprinkle the crushed pistachios on top of the egg.
  6. Drizzle with the rest of the olive oil and enjoy.
