Ingredients
- 1 large handful of salad greens (I used arugula)
- 2 Tablespoons (30 ml) olive oil
- 1 teaspoon (5 ml) freshly squeezed lemon juice
- 100 g smoked salmon slices
- 2 Tablespoons pistachios, crushed
- 1 poached egg
Instructions
- Place a large handful of salad greens into a bowl and toss with 1 tablespoon of olive oil and 1 teaspoon lemon juice.
- Add the slices of smoked salmon on top of the salad greens.
- Poach an egg (see this recipe for more detailed instructions).
- Place the poached egg on top of the smoked salmon.
- Sprinkle the crushed pistachios on top of the egg.
- Drizzle with the rest of the olive oil and enjoy.
