Ingredients

  • 1 large ripe avocado, stone removed
  • 2 teaspoons (10 ml) fresh lime juice
  • 1 Tablespoon cilantro, chopped
  • 1 Tablespoon (15 ml) olive oil
  • Sea salt and black pepper, to taste
  • 4 soft boiled eggs
  • 4 slices of prosciutto or ham

Instructions

  1. With a spoon, scoop out and then smash the avocado in a bowl until it’s pretty mushy.
  2. Add the lime juice, chopped cilantro, olive oil, and salt and black pepper to taste.
  3. Soft boil 4 eggs.
  4. Serve together with slices of ham.
