Make sure the meat is uniform and perfectly covers the egg. For the coating, use a beaten egg and some almond flour. Dip the scotch egg first in the beaten egg, then in the almond flour, and repeat. Let it sit for a minute or two, and then deep fry it until it’s golden brown. Be careful to keep the sausage layer thin, so it has enough time to cook through.
