Keto Rosemary Roast Beef and White Radishes

Ingredients

  • 3 lb (1.5 kg) boneless beef roast
  • 2 white daikon radishes (or use 4 carrots), peeled and chopped
  • 3 Tablespoons rosemary, chopped
  • 2 Tablespoons salt, to taste
  • 2 Tablespoons (30 ml) olive oil

Instructions

  1. Preheat oven to 400 F (200 C).
  2. Rub olive oil, rosemary, and salt over the beef.
  3. Place the peeled and chopped radishes in the bottom of a baking dish.
  4. Place the beef (with the fat on top) on top of the radishes and bake for 1 hour.
  5. When done, wrap the beef in foil and let rest for 20 minutes before serving.
