Description

A cabbage soup that suits your diet


Ingredients

  • 1 red cabbage, sliced
  • 1/4 onion, chopped
  • 8 cups (2 l) of bone broth (or chicken or beef broth)
  • 4 stalks of celery, chopped
  • 1 bell pepper, chopped
  • 2 tomatoes, chopped
  • 3 Tablespoons (45 ml) avocado oil, to cook with
  • 1/4 cup bacon bits (optional)

Instructions

  1. Add avocado oil to a large pot and then saute the cabbage, onions, celery, and bell peppers in the avocado oil for 3 minutes.
  2. Pour in the broth and add in the diced tomatoes.
  3. Bring to a boil and then simmer for 20 minutes until the cabbage is cooked.
  4. Top with some bacon bits (optional) or add in some leftover shredded beef or chicken for a hearty stew.
