Can’t I Just Use the Pre-Made Crust?

Sure, you can eat the pre-made pie crust at the store, but it is definitely not keto.

It’s mostly made of white all-purpose flour (read: carbohydrates) and there are better flours out there for keto.

Another main ingredient in pie crust is butter and/or shortening, and lots of it. Many people have sensitivities to dairy (that they may not even be aware of), so I recommend eliminating it for a time and seeing how you feel when you reintroduce it.

In many cases, I suggest ghee in place of butter for keto recipes, but this particular crust doesn’t need it.

Some pie recipes call for a teaspoon or so of sugar, which is definitely not a move you want to replicate for keto. You could add a bit of erythritol if you felt it needed it, but personally, I wouldn’t sweeten the crust.

I mean, think about it. You’re most likely making a sweet filling for the pie, so do you really need extra sweetness in the crust?

What I Used to Make Keto Crust

If you do a lot of keto baking, you probably know that achieving the right taste and texture using “safer” flours can be tricky.

Oftentimes it takes a mix of flours to get a similar result without the high carb factor. For this pie, I had the best luck with a blend of almond flour, coconut flour, and flax meal.

Don’t worry if the dough is a little thicker than you’re used to. That’s normal. If you’ve mixed all of the ingredients and things are still looking dry and powdery, consider adding a tiny amount of water.

Quick tip: Keep almond flour in your refrigerator or freezer to keep it fresh. The fat in the almond flour can make it go rancid more quickly than other flours if left in the pantry.

Instructions

  1. Preheat oven to 350 F (175 C).
  2. Mix together all the ingredients to form a dough. Add additional water if needed to form the dough.
  3. To make 4 small pie crusts, divide the dough into 4 pieces and roll each out into a flat circle.  Then press each into a greased small pie or tart pans.
  4. If you’re using this recipe to create one large pie, then don’t divide the dough, and instead, roll the dough into a larger flat piece and place into a 9-inch pie tin.
  5. Bake for 10-12 min until slightly browned.
