Ingredients
- 2 slices smoked salmon (approx. 2 oz or 56 g)
- 1 oz (28 g) cashew cheese (or use cream cheese use if you are ok with dairy)
- 6 thin slices of cucumber
Instructions
- Place the smoked salmon slices on a piece of parchment paper.
- Spread 1/2 an ounce of cashew cheese on each slice of salmon. Top each with 3 thin slices of cucumber.
- Roll up the salmon slices, starting at the bottom.
