How This Pecan Pie is Different

If you don’t know what’s in “regular” pecan pie, you might not appreciate how very non-keto it is. Let’s have some fun and break it down.

We’ll start with the obvious – pecans. No issues there, and I used them in this recipe too. After all, it’s called “pecan pie,” and I don’t believe in false advertising!

Eggs are usually next on the list, and they get to stay in this recipe too. You’ve got protein, nutrients, and a killer binding ingredient.

Next comes the sugar, and that’s where we need to shake things up. Plain white sugar isn’t going to fly on keto, so I chose erythritol to fill in. Erythritol is a sugar alcohol that is well tolerated by most folks.

It does not change blood sugar levels, making it an excellent swap for sugar.

Of course the sugar isn’t sweet enough, so most pecan pie recipes also call for corn syrup. That’s what gives pecan pie its ooey gooey texture, but there’s a steep price to pay.

Corn syrup has a ton of carbohydrates. You just can’t do that on keto, so I kindly showed corn syrup the door. It’s not right for this pie.

The butter is easily replaced with ghee, although I suggest a bit more than some of the “regular” pie instructions. Sometimes you have to play with the ratio of ingredients when formulating recipes for keto, and that was the case for this pie.

Vanilla extract and a pinch of salt work just fine in this keto pie recipe, so no changes there.

Now, the pie crust is another issue – obviously a sugary flour-packed pie shell isn’t OK for keto.

Fortunately I worked up an alternative option that won’t blow your carb intake out of the water and knock you right out of ketosis.

Instructions

  1. Make our regular pie crust for a 9-inch pie pan.
  2. Preheat oven to 350 F (175 C).
  3. Melt the ghee and add in the vanilla extract and erythritol.
  4. In a separate bowl, whisk the eggs and then combine with the ghee and 1 cup of chopped pecans.
  5. Pour the filling mixture into the pie crust.
  6. Top with the whole pecan halves.
  7. Bake for 30 minutes until set.  Check to make sure it doesn’t get browned.
