From everyday recipes to fill a hungry family, to impressive dishes like the Eggcellent Meatloaf and various stuffed ones, I am sure you will be inspired to try making some of these yourself.

Most of the meatloaves here can be frozen ready-sliced, so you will never be without a quick and tasty lunch or lunchbox treat to take to work.

Here is another basic recipe that you can have fun with! Make it just like this, or if you are feeling braver, use different meats like turkey and bacon, play around with adding different veggies to make the loaf go further, or spice it up with some garlic and ginger – the choice is yours! Make loads then you have a quick and easy lunch for the next day.

Ingredients: ground beef, eggs, almond flour, onion, spinach, bell pepper, bbq sauce, chili powder, salt, garlic cloves, oregano, thyme, cayenne, olive oil.

With the bell peppers adding lovely little patches of color to this meatloaf, it is one of these dishes that looks as good as it tastes! If you are not keen on spinach you could use a green pepper instead, or add in some chopped celery. Feel free to use whatever paleo tomato or barbecue sauce you prefer to serve over the top, or serve some homemade pesto on the side.

The spicy, flavor-packed cupcakes can also be frozen, so if you are having folk round for lunch, just defrost as many as you need and top with guacamole ‘frosting’!

This must be one of the easiest meatloaf recipes there is, yet the results are great! The onion and garlic give the beef a lovely flavor, and the liquid smoke adds a great dimension to the taste. Obviously you can add in some chopped vegetables as well, and that will make it more economical. This hearty dish can be frozen in slices, separated with parchment paper, then you can take out exactly what you need.

Ingredients: ground chorizo, ground beef, eggs, celery stalks, pimientos, black olives, yellow mustard or Dijon, bacon.

With the warming spices from the chorizo, this meatloaf would be great on a chilly night served up with a heap of vegetables or a simple salad. When I serve meatloaf like this, there is always a fight over who gets the end piece, because it’s got the most bacon! If you would rather, you can use the bacon to line a loaf tin, place the meat mixture in and wrap the bacon over the top, and that will make it a more even shape.

Once cooked, allow the meatloaf to rest for around 10 minutes, then it will be easier to carve and won’t fall apart.

If you like breakfast sausage – and who doesn’t? – then I am sure you will love this meatloaf! It is packed with wonderful herbs and spices and tastes even better left in the fridge overnight to allow all the flavors to marry together. Got too much left over? Simply slice it up and pack in bags in the freezer for delicious breakfasts all week. You can reheat the slices in the microwave or fry gently until heated through and topped with eggs.

If you would like to expand on the flavors a bit you could add in some chopped bacon, or use half turkey and half pork. The recipe also works if you want added vegetables in your mix – chopped asparagus would work well.

Meatloaf is one of those dishes that can be great for feeding a hungry family at a lower cost, or used to impress by incorporating more expensive meats like wild boar or venison. Whichever way you make it, it tastes great second-day too! If you are adding the ketchup for the full length of time as listed here, you might find it will burn, so why not add it for the final ten minutes of cooking time and broil it to caramelize the top!

Soft egg, juicy meat and crispy bacon, and all you need is a few salad leaves to set it off perfectly.

Low Carb Cheesy Spinach Stuffed Meatloaf (Contains Dairy)

This is another impressive meatloaf to try out on the family! Even the kids will enjoy the mozzarella and spinach centre! Using the parchment paper to help you roll up the meatloaf is a great idea – it saves on time and messy hands. If you prefer a lighter version you could try using ground turkey or chicken instead, but either way, remember to let it rest before cutting to prevent it from falling apart.
