Make it just like this, or if you are feeling braver, use different meats like turkey and bacon, play around with adding different veggies to make the loaf go further, or spice it up with some garlic and ginger – the choice is yours! Make loads then you have a quick and easy lunch for the next day.

Ingredients: ground beef, eggs, almond flour, onion, spinach, bell pepper, bbq sauce, chili powder, salt, garlic cloves, oregano, thyme, cayenne, olive oil.

With the bell peppers adding lovely little patches of color to this meatloaf, it is one of these dishes that looks as good as it tastes! If you are not keen on spinach you could use a green pepper instead, or add in some chopped celery. Feel free to use whatever paleo tomato or barbecue sauce you prefer to serve over the top, or serve some homemade pesto on the side.

Simply slice it up and pack in bags in the freezer for delicious breakfasts all week. You can reheat the slices in the microwave or fry gently until heated through and topped with eggs.

The recipe also works if you want added vegetables in your mix – chopped asparagus would work well.

If you are adding the ketchup for the full length of time as listed here, you might find it will burn, so why not add it for the final ten minutes of cooking time and broil it to caramelize the top!

Using the parchment paper to help you roll up the meatloaf is a great idea – it saves on time and messy hands. If you prefer a lighter version you could try using ground turkey or chicken instead, but either way, remember to let it rest before cutting to prevent it from falling apart.
