We’ve made these classic cookies keto-friendly without losing any of the taste.
Ingredients
- 1.25 cup (120 g) almond flour
- 1/3 cup (28 g) flax meal
- 2 Tablespoons (30 ml) coconut oil
- 2 eggs, whisked
- Erythritol or stevia, to taste
- 1 teaspoon (5 ml) vanilla extract
- Dash of salt
Instructions
- Preheat oven to 320 F (160 C).
- Mix together to form a dough. Roll into 20 small madeleine-shaped pieces and use the back of a greased fork to press into the top of the dough scoring lines to create the madeleine cookies look.
- Bake for 12-15 min until slightly browned.
