Making The Tartlet Crust
A tartlet just isn’t a tartlet without a crust. For this Keto version, we made it simple by binding flavorful almond flour together with ghee. This makes for a soft bite that can flake away in your mouth.
If you want to take the crust up another level feel free to add in some slivered almonds to add a little more of a bite. The important part is allowing this crust to set. The melted ghee will bind everything together after setting in the fridge.

Instructions
- To make the crust, mix the ghee and almond flour together and press into 12 mini muffin cups.
- To make the filling, warm the coconut butter and coconut oil and mix together well. Add in the vanilla extract, lemon extract, lemon zest, and sweetener.
- Spoon the filling into the cups.
- Refrigerate to set for at least 4 hours.
