Keto Lemon Popsicles Recipe
Popsicles on Keto? Yes, you can. This Keto lemon popsicles recipe is a must for muggy summer afternoons.
How Much Sugar is in Popsicles?
A typical store-bought popsicle might have about 7 grams of sugar and 10 grams of carbs.
That doesn’t leave you much wiggle room in the rest of your day to eat carbs. There are actually much worse items in terms of carbs and sugar, but that doesn’t mean you should give in and buy a box. After all, that’s a whole box of sugar bombs to go through, and that’s a lot of days where you’re potentially not eating nutritious foods just to stay within your macros.
You might wonder about sugar-free popsicles. While indeed a sugar-free version would have less sugar and only about 4 grams of carbs, there is some other stuff in there too.
It takes roughly 13 ingredients to make that store-bought sugar-free popsicle. And you can bet those ingredients aren’t terribly nutritious.
This Keto popsicle has just four ingredients –and one of them is water!
How I Made This Keto
If you just wanted an ice cube, you wouldn’t need a recipe. What you’re looking for is flavor, so there are ways to give you that sweet satisfaction without adding sugar.
For a lemon popsicle, we can use an actual lemon. I know, imagine that, using real food as an ingredient!
You’ll need the zest and the juice to make these popsicles…pop.
To sweeten them, I chose erythritol, a sugar alcohol that doesn’t spike your blood sugar like regular white sugar. Just two tablespoons will make these pops plenty sweet.
You end up with popsicles with only about one gram of sugar and one gram of net carbs –so we did even better than the sugar-free store-bought popsicle!
