Description
Spicy jalapenos add excitement to this casserole
Ingredients
- 1/4 cup (60 ml) of coconut oil, to cook with
- 4 chicken breasts (1.7 lb), diced
- 1/2 head of broccoli, broken into small florets
- 2 medium bell peppers, chopped
- 1 medium onion, chopped
- 2 jalapeno peppers, seeds removed and finely diced
- 1 can (400 ml) of coconut milk
- 1 Tablespoon (15 ml) of hot sauce (or to taste) (optional)
- 2 cloves of garlic, minced or finely diced
- 1/4 cup of fresh parsley, chopped
- Salt and pepper, to taste
Instructions
- Preheat the oven to 400 F (200 C).
- In a large pan, melt the coconut oil over medium-high heat. Add the chicken, broccoli, bell peppers, onion, and jalapeno peppers to the pan. Saute until the chicken is cooked through and the vegetables are soft, about 10 to 12 minutes.
- Remove the pan from the heat and add the coconut milk, optional hot sauce, garlic, and fresh parsley. Season with salt and pepper, to taste. Carefully pour the mixture into a baking dish.
- Place the baking dish in the oven and bake for 20 minutes.
